The Hayashi area is surrounded by the wide and winding Hino River, and characterised by excellent drainage thanks to the river sand. While the soil has a similar clay content to the neighbouring Hashimoto and Yuge areas, it has distinctively different properties which create a sake with mild flavours and an overall impression of lightness and freshness.
