ABV:16%
Rice:Yamadanishiki rice grown in Yamazura Ryuou, Shiga Prefecture(Environmentally Sensitive Agricultural Produce)
grower:Noboru Iguchi
Milling ratio:50%
Located to the north-west of the town of Ryuou, where the Zenkoji River reaches the base of Mount Kagami. The main rice fields are on a plain near the River. The soil is affected by both river sand carried by the Zenkoji River, and sand and gravel produced from weathered granite on Mount Kagami. When dry it turns quite white and breaks up, is light in texture, and has excellent drainage. First impressions of sake made from the hard, compact Yamadanishiki produced by this soil are its floral and delicate aromas. On the palate, however, it is dry and tight. Severe and sturdy in character, it leaves its mark in the shape of a lingering touch of astringency in the finish.
