Our brewery is located in the Yuge area, directly south of where the Hino River winds in broad sweeps as it flows down from the Suzuka Mountains. The area is intersected not only by the meandering Hino River but also the Sofu River and two other small rivers. Lower-lying than surrounding areas, Yuge is often affected by flooding. So although it has the same clayey soil mixed with sand as the neighbouring Hashimoto and Hayashi areas, sake produced with rice from Yuge also has a solid structure and bold character with mineral-like notes, reminiscent of fine gravel from the rivers and representative of this area.
